Monarca started with Jorge, our owner and chef, whose culinary journey began more than 30 years ago in Smithtown, New York.

What started as a passion for gourmet cuisine grew into a lifelong love for creating food that brings people together.

 

Alongside his wife, Martha, Jorge created Monarca as a family-owned restaurant built around great food, warm hospitality, and meaningful moments shared around the table.

Today, we’re proud to call Holbrook, New York home. Jorge is still at the heart of the experience, welcoming guests, connecting with the community, and constantly introducing new dishes and flavors that make every visit feel special and uniquely Monarca.
